Green Chile Turkey Taco Salad

1 1/2 lbs. ground turkey
2 tsp. olive oil
1 1/2 cups Hatch Chile Verde
1/4 cup fresh lime juice
1 Tbsp. cumin
dressing ingredients:
1/4 cup Hatch Chile Verde
1//2 cup cilantro, finely chopped
2 Tbsp. fresh lime juice
1/2 tsp cumin
1/2 tsp. salt
1/4 cup olive oil
Salad ingredients:
2 heads romaine lettuce, washed and chopped
1 green bell pepper, sliced
1 red bell pepper, sliced
1/2 Poblano pepper, chopped
1/2 bunch cilantro, finely chopped
2 avocadoes, diced
1 Tbsp. fresh lime juice

Heat 2 Tbsp. olive oil in a large nonstick skillet over medium-high heat
Cook turkey, crumbling with a spoon 4-6 minutes, until cooked through
Add Hatch Chile Verde, lime juice, cumin, and salt and pepper to taste
Simmer on low while you assemble the salad ingredients and dressing
To make the dressing, combine all ingredients in a food processor and process until smooth
In a large bowl, add lettuce, peppers and cilantro. Toss to combine
Arrange the lettuce mixture into serving bowls and top with a generous amount of the turkey
Drizzle on dressing and top with diced avocado
