Green Chile Breakfast Tostadas

4 corn tortillas
4 eggs
1 14.5 oz. can black beans, rinsed and drained
3 Tbsp. Greek yogurt
1 tsp. chili powder
1/2 tsp. cumin
salt and pepper to taste
1/2 cup Santa Fe Seasons Hatch Green Chile
1/2 cup cheddar cheese, shredded
1/2 avocado, sliced
1/4 cup chopped cilantro
1 green onion, sliced thin
1 lime, cut into wedges

Crisp the tortillas over and open flame or broil in the oven
In a small saucepan over medium heat, heat the beans until warmed through
Add chili powder, cumin, Greek yogurt and season with salt and pepper
Using a potato masher, mash the beans to your desired consistency. Stir in green chile
Spread a layer of beans on top of the tortillas and sprinkle each one with cheese
Over medium heat, spray a nonstick skillet with cooking spray
Fry 2 eggs at a time until the whites are set and season with salt and pepper
Gently place the eggs on top of the tostadas
Top with sliced avocado, cilantro, green onion and garnish with a slice of lime
