Green Chile Taco Salad

1 1/2 lb. ground beef
2 tsp. canola oil
1 1/2 cups Hatch Chile Verde
1/4 cup fresh lime juice
1 Tbsp. cumin
salt and pepper to taste
dressing ingredients:
1/4 cup Hatch Chile Verde
1/2 cup cilantro, chopped
2 Tbsp. fresh lime juice
1/2 tsp. cumin
1/2 tsp. salt
1/4 cup olive oil
salad ingredients:
2 heads romaine lettuce, chopped
1 green bell pepper, diced
1/2 Poblano pepper, finely chopped
1/2 bunch cilantro, chopped
2 avocadoes, diced
1 Tbsp. fresh lime juice

Heat oil in a large non-stick frying pan. Add ground beef and break apart with a spoon as it cooks
Cook over medium heat until browned, 4-5 minutes. Add chile verde, cumin, salt and pepper
Simmer on low, stirring occasionally, while you prep the other ingredients
For the dressing, add all ingredients to a blender and process until smooth
Toss together salad ingredients with dressing and portion onto plates.
Top with a generous portion of the meat mixture and drizzle a bit more dressing if desired
