Green Chile Mashed Potato Puffs

cooking spray
2 cups cooked mashed potatoes
1/4 cup Santa Fe Ole Hatch Green Chile
3 large eggs, beaten
1 cup Parmesan cheese, grated
1/4 cup minced chives
1/4 cup diced cooked bacon
salt and pepper to taste

Arrange a rack in the middle of oven and heat to 400 degrees F
Lightly coat cups of a mini muffin tin with cooking spray
Place mashed potatoes, green chile, eggs, 3/4 cup of the cheese, chives and bacon in a large bowl and stir to combine
Season with salt and pepper. Fill each muffin cup with potato mixture and sprinkle tops with remaining cheese
Bake until potato cups are set, browned on top and heated through, about 20 minutes
Cool 5 minutes in the pan, then use a small spatula to gently release them
Serve immediately
