  • Green Chile Cheddar Biscuits

    Ingredients:
    2 cups flour
    1 Tbsp. baking powder
    1/4 tsp. baking soda
    1 tsp. salt
    5 Tbsp. cold butter, diced
    1 cup cold buttermilk
    1 cup cheddar cheese, finely shredded
    1/3 cup Santa Fe Ole Hatch Green Chile, rinsed and drained
    1/2 tsp. white pepper
    additional shredded cheddar for the top of biscuits

    Directions:
    Preheat oven to 425 degrees F.
    In a medium bowl, combine flour, baking powder, baking soda, pepper and salt with a whisk.
    Add the butter to the flour mixture and use a pastry cutter to get coarse crumbs.
    Add buttermilk until just combined. Add cheese and green chile and mix until just incorporated.
    Turn dough out onto a lightly floured surface and sprinkle 2 tablespoons of flour over the top.
    Knead the dough 5-6 times and pat into a 1/2-inch-thick circle.
    Use a 2-inch round biscuit cutter, cut and place on parchment paper 1 inch apart.
    Rework the dough scraps, shape again, and cut more circles.
    Sprinkle about a teaspoon of shredded cheese on top of biscuits.
    Bake 15-18 minutes until raised and golden brown.
