  • Biscuits and Red Chile Chorizo Gravy

    Ingredients:
    12-15 Hatch Red Chile Pods
    3 1/2 cup water
    2 cloves garlic
    2 Tbsp. canola oil
    3 Tbsp. flour
    1 tsp. salt
    6 oz. bulk chorizo, cooked

    Directions:
    Rinse the chile pods under running water to wash off and dirt/debris.
    Break off the tops of the red chile pods and dump out the dry seeds.
    Add pods to 3 1/2 cups of water in a saucepan and bring to a boil.
    Boil ten minutes and let them sit another 10 minutes.
    Scoop out rehydrated chile pods with a slotted spoon and place into a blender with 3 cloves of garlic.
    Add about 1 cup of cooking liquid and puree on high 1 minute.
    In another pan, heat oil over medium heat.
    Add flour and stir with a whisk until combined. Cook, stirring, one minute.
    Strain the red chile and slowly add to the roux, stirring constantly.
    Add salt and chorizo and simmer 5 minutes. Serve with Green Chile Cheddar Biscuits.
