Chile Con Papas

2 Tbsp. canola oil
4 medium potatoes, diced
3 Tbsp. flour
3 Tbsp. Hatch Red Chile Powder
2 cups water
1 clove garlic, minced
pinch of salt

Heat oil over medium-high heat in a large saucepan.
Add potatoes and fry until golden.
Add flour and chile powder. Brown for a few seconds.
Blend inb water, garlic and salt.
Cover and simmer 15 minutes.
Serve with warm tortillas.
