Carne Adovada

7-8 lbs. pork should or pork butt, cut into 1-2 inch chunks
Hatch Red Chile Sauce

Spray a large, heavy Dutch oven with cooking oil.
Place the pork pieces in the Dutch oven and add enough red chile sauce to coat the meat when stirred
Stir well to coat and refrigerate 24 hours
Remove meat from refrigerator and allow it to come to room temp
Preheat oven to 300F.
Place meat in the oven and cook covered 2 hours
Remove from oven and stir well
Return meat to the oven and bake uncovered 1-2 hours or until the meat is pull apart tender and liquid has reduced
