The authors, both natives of the state, have gathered their mothers' mouthwatering recipes and presented them in a form that will be equally useful to the veteran Southwestern chef and the novice. They demonstrate with instructions and drawings how to roast and peel green chiles and how to string a ristra of red chiles. I have not tried any of the reciepe's as of yet but I do see several that I am going to try. I really like the fact that it tells you what the name of the dish and what it is. I also like the way that it references other parts of the book as in how to make chili powder and such for the dish that you are about to make. I looked from cover to cover and can't wait to try the recipe's.
