Tamale Pie

2 boxes Jiffy Corn Brean Mix
2 14.75oz cans creamed corn
1 cup sour cream
2 eggs
2 lbs. ground beef
1 yellow onion, diced
2 packets Taco seasoning
1 jar Hatch Chile Colorado
2 cups sharp cheddar cheese, shredded
1 cup mozzarella cheesze, shredded

Preheat oven to 400 degrees F and grease an 11x13 baking dish.
In a large bowl, combine the cornbread mix, sour cream and eggs.
Spread into the baking dish and bake 30-35 minutes, until cooked through.
While cornbread is baking, brown the ground beef with the diced onion.
Drain and add taco seasoning and chile Colorado. Mix well and simmer until thickened, about 5 minutes.
When cornbread is finished, use a fork to poke holes in the top.
Spread meat mixture on top with cheese and bake another 15-20 minutes until cheese is bubbling.
