Red Chile Eggs

4 large eggs
1 1/2 cups Hatch Red Chile Colorado
1/2 cup Monterey Jack cheese, shredded
sliced avocado, diced onion and cilantro to garnish

In a medium sized, oven proof skillet over medium heat, add red chile.
Cook, until heated through. Carefully crack eggs on top of the red chile sauce and simmer very gently until whites are set, about 1-2 minutes.
Place in the oven and bake until eggs are cooked to your liking.
Top with avocado, onion and cilantro and serve with warm tortillas.
