2 Tbsp butter
2 1/2 lbs. ground beef
1/2 onion, diced
1 green bell pepper, diced
5 cloves garlic, minced
2 Tbsp. tomato paste
1/2 cup ketchup
1 cup beef stock
2 Tbsp brown sugar
2 tsp. Hatch Red Chile Powder
1 tsp. dry mustard
1/2 tsp. Los Chileros Chile Caribe
salt and pepper to taste
1/2 cup Greek yogurt
1/2 cup Fresh Chile Co. Salsa Verde
1/4 cup fresh chopped cilantro
2 Tbsp. fresh lime juice
1 14oz. bag coleslaw mix
In a large bowl, add all slaw ingredients and toss well to combine. Set aside.
Melt 1 tablespoon of butter in a large skillet over medium-high heat.
Add ground beef and cook until browned. Drain most of the fat and discard.
Add onions, bell pepper and garlic and tomato paste.
Cook a few minutes, until vegetables are soft.
Add ketchup, brown sugar, chile powder, mustard, chile caribe and beef stock.
Stir to combine and simmer 15 minutes, adding salt and pepper to taste.
Spread rolls with butter and brown in a skillet.
Spoon sloppy joe mixture over the rolls and top with a large spoonful of slaw.
