One rack pork baby back ribs
juice of one lemon
1/4 cup brown sugar
2 tsp. Hatch Red Chile Powder
2 tsp. smoked paprika
1 tsp. dry mustard
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/4 tsp. Los Chileros Mexican Oregano
1/2 cup Fresh Chile Co. Hot Honey
Preheat oven to 300 degrees F.
Remove excess fat and silver skin from the ribs and cut into individual pieces.
Rub all over with lemon juice. Combine spices together and coat ribs well.
Place ribs meat side down in a large baking pan and cover tightly with foil.
Bake 2 1/2 hours. Remove ribs and pour off liquid.
Brush ribs generously with hot honey.
Set oven to broil and return ribs to the middle rack of the oven.
Broil 2-3 minutes per side until honey is caramelized.
