  • Hatch Honey Mustard Glazed Carrots

    Ingredients:
    2 lbs. carrots, peeled
    2 Tbsp. canola oil
    2 Tbsp. maple syrup
    1 Tbsp. La Posta Green Chile Honey Mustard
    1/2 tsp. rice wine vinegar
    1 small garlic clove, minced
    1 Tbsp. chopped parsley

    Directions:
    Combine oil, maple syrup, mustard, vinegar and garlic in a small bowl. Set aside half the mixture.
    Toss the carrots in half the mustard mixture and arrange in a single layer on a bakng sheet.
    Bake 20-30 minutes, turing halfway through.
    Toss carrots in remaining glaze before serving.
