Hatch Green Chile Refried Beans

Ingredients:
1 lb. dried pinto beans, cleaned and sorted
1/2 white onion
6 garlic cloves, peeled
3 cups Hatch Chile Verde
4 Tbsp. canola oil
1/4 cup finely chopped white onion
3 garlic cloves, peeled and minced
queso fresco cheese, crumbled for serving

Directions:
Add the dried beans to a large bowl and cover with water. Soak 6-8 hours.
After soaking, drain, rinse and add beans to a large pan with 1/2 onion and 6 garlic cloves.
Cover with water, about 6 inches over the beans.
Bring to a low boil, cover and simmer 1-2 hours, until beans are tender.
Drain the beans, reserving the cooking water and discarding the onion and garlic.
Add oil to a frying pan over medium heat.
Add chile and onion and cook until softened and slightly browned, stirring often.
Stir in the garlic and cook for 1 minute.
Add bean and a little of the bean broth and mash the beans with a potato masher.
Continue to mash and add bean liquid as needed to make them as thick or as saucy as you like.
Taste and add salt if needed. Serve with crumbled queso fresco.
