Ground Pork and Green Chile Stew

Ingredients:
1 lb. ground pork
1/2 cup chopped white onion
2 cloves garlic, minced
1 tsp. cumin
2 Tbsp. flour
salt and pepper to taste
1 14.5 oz. can diced tomatoes
1 1/2 cups Hatch Chile Verde
1 large russet potato, peeled and diced
4 cups chicken broth

Directions:
Brown pork in a Dutch oven along with onions, garlic and cumin
Sprinkle meat with flour and stir until lightly browned.
Season with salt and pepper
Add tomatoes and green chile and stir in chicken stock
Bring to a boil, lower heat to a simmer. Add potatoes
Cook, covered 30 minutes, until slightly thickened and potatoes are tender
Serve with warm tortillas

My Mother that came from Tucumcari NM made us pork and green chili stew growing up. We grew up in Riverside California and had great fresh green chilies She roasted them and also didn’t grind but chopped her pork. This recipe is exactly how she made it. It was one of those memories you never forget. Mamas Mexican food wasn’t like they make in California but her being from Tucumcari New Mexico hers was true to they was she grew up.
