Green Chile Street Corn Salad

1/2 cup Santa Fe Ole Roasted Hatch Green Chile
2 Tbsp. butter, room temperature
1/4 cup mayo
1 tsp. smoked paprika
6 cups fresh corn kernels
3 oz. cotija cheese, crumbled
juice of 1/2 lime
1/2 bunch cilantro, chopped
salt and pepper to taste

In a large bowl, mix together butter, mayo and paprika
Pour in corn kernels, green chile, cheese, lime juice, cilantro salt and pepper
Mix well to ensure everything is evenly coated. Serve at room temperature
