Green Chile Chicken Fajitas

1/4 cup vegetable oil
3 cloves garlic, minced
1/2 tsp. Hatch Red Chile Powder
1/2 tsp. Los Chileros Chipotle Powder
1/2 tsp. paprika
1/4 tsp. cumin
1/4 tsp. sugar
2 tsp. fresh lime juice
1 lb. boneless, skinless chicken breast, sliced
1 medium onion, sliced
1 large red bell pepper, seeded and sliced
4 oz. Hatch Chile Verde
fresh cracked black pepper
Shredded cheese and sour cream for serving
chopped avocado, cilantro and salsa, for serving

In a small bowl, whisk together 3 tablespoons of vegetable oil with garlic, salt, spices, sugar and lime juice. Set aside
Heat a large skillet over medium-high heat. Add remaining oil and stir in the chicken
Cook 2 minutes, or until lightly browned.
Stir in the onion and bell pepper and cook 3-5 minutes until vegetables are tender
Stir in Chile Verde and spice mixture and cook another 2 minutes until everything is well combined and heated through
Season with salt and pepper and serve with tortillas and toppings
