  • Green Chile BBQ Meatballs

    Ingredients:
    1 lb. lean ground beef
    1 egg
    1 tsp. mustard
    ⅓ cup finely chopped onion
    ⅓ cup breadcrumbs
    ¼ teaspoon dried parsley
    ¼ teaspoon garlic powder
    ¼ cup Hatch Chile Verde
    salt & pepper to taste
    1 cup Hatch Chile BBQ Sauce

    Ingredients:
    Preheat oven to 425 degrees F, and line a baking sheet with parchment paper.
    Mix all ingredients, except BBQ sauce in a large bowl and shape into small meatballs, about 1 teaspoon meat mix per meatball for appetizer size.
    Place meatballs on the baking tray and bake 10-12 minutes.
    Once the meatballs are cooked, add meatballs and BBQ sauce in a slow cooker and cook on low for 3-4 hours.
