Chile Colorado con Papas

2 cups diced white potatoes
1 lb. beef sirloin, cut into 1/2-inch cubes
3/4 cup chopped onion
1 clove garlic, minced
2 Tbsp. olive oil
2 cups Santa Fe Ole Hatch Red Chile Sauce
1 1/2 cups chicken broth
1/4 tsp. cumin
1/2 tsp. oregano
salt and pepper to taste

Precook the potatoes in boiling salted water for 4 minutes and set aside
Season the meat generously with salt and pepper
Add olive oil to a large sauté pan on medium heat. Add beef and brown on all sides
Set meat aside and sauté onions until soft, about 3 minutes. Add garlic and cook one minute, until fragrant
Add potatoes, red chile sauce, spices and enough broth to cover potatoes by 1/2 inch
Simmer 15 minutes, until meat is soft. Add meat and simmer to thicken sauce another 15 minutes
Salt to taste and serve with fresh tortillas
