Cheese Stuffed Green Chile Meatballs

1 lb. ground beef
1/2 cup Santa Fe Ole Hatch Green Chile
1/2 cup bread crumbs
1 egg
1 tsp. Mexican Oregano
1 tsp. garlic powder
1/2 tsp. salt
1/2 tsp. cumin
8 oz. pepper jack cheese, cubed
3 cups Hatch Chile Verde

Preheat oven to 450 degrees F.
In a large mixing bowl, add beef, green chile, breadcrumbs, egg and spices
Combine thoroughly. Use a scoop to portion meatballs and press a cube of cheese into each meatball
Mold the meat around the cheese to cover completely
Place meatballs in a greased baking pan. Pour chile verde over and cover pan with foil
Reduce oven temperature to 350 degrees F and bake 25 minutes. Remove foil and bake uncovered 5 minutes
