Hatch Green Chile Cashew Queso
Ingredients:
1 jalapeno
1 cup cashews, soaked overnight
1/4 cup Santa Fe Ole Hatch Roasted Green Chile
1/3 cup nutritional yeast
1/2 tsp. salt
1/2 tsp. cumin
1/4 tsp. chili powder
1/4 tsp. garlic powder
1/2 cup water
Directions:
Preheat broiler to high and position rack in the upper third of the oven
Place jalapeno on a foil lined baking sheet and broil 10-15 minutes, turning every few minutes
When the jalapeno is black and charred, place in a plastic bag and steam 10 minutes
Remove the charred skin along with the seeds and stem under cold running water
In a blender add jalapeno, cashews, green chile, nutritional yeast, spices and water
Blend until completely smooth and creamy.
Serve with chips, on a taco salad or in burrito bowls
