The Fresh Hatch Chile recipe started with Randy’s father, Arnold, who loved enchilada sauce so much that he experimented and perfected his recipes over many years of trial and error with his wife, Cheri. Now the recipe is Randy’s, and the McMillan family has become known for creating their fabulous Hatch chile sauces. Randy and his wife Carol started making thousands of jars of sauce for clients and friends as gifts, and after being asked for, even more, the decision was made to expand. The family recipe is now being made in a commercial kitchen, using only the freshest ingredients, including red and green chile from Hatch, New Mexico – the chile capital of the world!

"My wife of 41 years is Acoma Pueblo. I have learned many years her love of her Indian food and chili peppers are a mainstay. I bought this as a way to enhance our experience as a spicy ketchup. I was wrong. My wife takes chili powder and mixes it with water to make a paste to accent her food. While I don't always follow her lead i am well aware of the taste. This is exactly what we feel this product tastes like. A chili sauce but lacks the taste and sweetness of a tomato base ketchup. Don't get me wrong as we believe as a chili based sauce it has a lot of applications that we will use it for, but not as a 'spicy ketchup'."
