Spicy Hatch Green Chile Egg Salad

12 large eggs
⅓ cup celery, diced
⅓ cup green onion, chopped
⅓ cup sweet pickle relish
4 ounces diced pimentos, drained
¼ cup mayonnaise
1 Tbsp. La Posta Hatch Green Chile Mustard
1 tsp. Six Seasonings Blend
salt and pepper to taste

Boil eggs 10-12 minutes.
Cool in ice bath before peeling.
Peel and coarsely chop eggs. Add eggs and rest of ingredients to a medium sized mixing bowl.
Mix gently until ingredients are well combined.
Chill and serve with crackers, on a croissant or a bed of lettuce.
