Spicy Hatch BBQ Pulled Pork

2 lbs. pork butt, cut into large chunks
1/2 yellow onion sliced
1 Tbsp. paprika
1 tsp. black pepper
2 tsp. salt
1/2 bottle Hatch BBQ Sauce
2 cloves garlic, minced
1/2 cup water

Add all the ingredients to a slow cooker. Cook on medium 6 hours
Remove from crockpot and shred with 2 forks.
Serve on toasted hamburger buns
