Spicy Hatch Barbecue Pineapple Chicken

2 lb. boneless skinless chicken breast, cubed
1 cup Hatch BBQ Sauce
1 onion, sliced
2 bell peppers, sliced
12 oz. pineapple chunks
1 jalapeno, seeded and diced
salt and pepper to taste

Preheat oven to 400 degrees F. Coat a baking dish with cooking spray, set aside
In a bowl, toss together chicken pieces and 2/3 cup of barbecue sauce. Marinate 15 minutes
Arrange onion in baking dish and top with marinated chicken pieces, bell pepper and pineapple
Brush with remaining barbecue sauce and sprinkle jalapeno on top
Bake uncovered 30-35 minutes until chicken is cooked through
Serve and spoon sauce and juices over chicken
