Sausage and Green Chile Beer Cheese Dip

1/2 lb. ground Italian sausage, casings removed
1/2 red onion, diced
1 cup Santa Fe Ole Roasted Hatch Green Chile
1 Tbsp. flour
1 cup beer
1 cup smoked cheddar cheese
1 cup sharp cheddar cheese
1 tsp. Dijon mustard
1 oz. cream cheese

In a medium sized saucepan over medium heat, brown the sausage til almost cooked through, about 5 minutes
Add onion and continue to cook til onion is softened. Add green chile and stir to combine
Add flour and stir together for 1 minute. Add beer, bring to a simmer and reduce heat to low
Add cheeses and Dijon mustard and let melt together
Enjoy with tortilla chips, baguette slices or soft pretzels
