Red Chile Mashed Potatoes

These savory red chile mashed potatoes would make a great side to any meat dish

3 lbs. Idaho potatoes, peeled and diced
1 cup heavy cream
4 Tbsp. butter
1/4 cup Red Chile Sauce
salt and pepper to taste

Place potatoes in a large pot and cover with water
Cover in bring to a boil over high heat, reduce to a simmer
and cook covered, until potatoes are very tender 13-15 minutes
Combine cream, butter and red chile sauce in a small sauce pan
Bring to a simmer and remove from heat
Drain potatoes and mash to your desired consistency
Add the cream mixture, season with salt and pepper and serve
Sprinkle with red chile powder to garnish
