Red Chile Cheese Sloppy Joes

1 1/2 lbs. ground beef
salt and pepper, to taste
1 medium onion, chopped
a few shakes of Worcestershire sauce
2 tablespoons Hatch Red chili powder
2 teaspoons cumin
8 oz. tomato sauce
8 oz. water
1 1/2 cups shredded cheddar cheese
6-8 hamburger buns, toasted

In a large skillet, cook and crumble the beef with salt, pepper, and onion until the beef is no longer pink. Drain if necessary.
Add the Worcestershire sauce, chile powder, cumin, tomato sauce, and water to the skillet. Bring the mixture to a boil and then reduce heat to medium-low heat, occasionally stirring until it reaches your desired consistency.
Remove the skillet from the heat and stir in the cheese until it melts.
Serve the meat mixture on hamburger buns.
