Red Chile Beef Stew

1 Tbsp. canola oil
1/2 lb. lean beef stew meat, 1/2 inch cubed
3 small potatoes, diced
1/2 medium onion, diced
1 jar Santa Fe Seasons Red Chile Sauce
2 cloves garlic, minced
1 cup chicken stock

Heat oil in a 3-4 qt. pot or Dutch oven.
Season beef well with salt and pepper.
Add beef and brown over medium heat until well caramelized, 5-6 minutes.
Add potatoes and onion, brown 4-5 more minutes, stirring frequently.
Add garlic and cook 1 more minute.
Add red chile and chicken broth, bring to a high simmer, stirring to combine.
Lower heat, cover and simmer 20 minutes.
Serve with warm tortillas.
