New Mexico Frito Pie

2 Tbsp. canola oil
1 lb. ground beef
1 onion, diced
1 clove garlic, minced
1 tsp. Los Chileros Mexican Oregano
1 1/2 cups Hatch Chile Colorado
1 cup beef broth
3 Tbsp flour
small bags of Fritos
grated cheddar cheese
shredded lettuce, diced tomato, diced onion for garnish

Heat a Dutch oven over medium high heat and drizzle with canola oil
Add beef and as it begins to brown, add onion and garlic. Stir to combine
When beef has browned and onions are translucent, add oregano
In a bowl, whisk together beef broth and flour. Add to the beef along with chile Colorado
Simmer 10 minutes.
To serve, slit Frito bags on the side with scissors and ladle chile on top
Garnish with cheese, lettuce, tomato and onion
