New Mexican Black Beans

Ingredients:
2 15.5oz cans black beans
1 Tbsp. bacon grease or vegetable oil
1 small white onion, diced
3 garlic cloves, minced
2 jalapeno peppers, seeded, minced
1/2 cup Hatch Chile Verde
1 Tbsp. cumin
1/2 tsp. chili powder
1/4 tsp. cayenne pepper
1/4 cup cilantro, chopped
juice of 1/2 lime
salt and pepper to taste
cotija cheese, crumbled for garnish

Directions:
Sauté onion, garlic and jalapeno in bacon grease on medium heat until softened, 2-3 minutes
Add black beans, chile verde, and spices. Stir to combine and bring to a simmer. Cook about 10 minutes
Stir in cilantro and lime juice.
Add salt and pepper to taste.
Garnish with cotija cheese and additional chopped cilantro
