Hatch Green Chile Cheddar Bread

3 cups + 2 Tbsp. flour
1 3/4 tsp. kosher salt
1/2 tsp. instant yeast
1 1/2 cups cool water
1/2 cup Santa Fe Ole Roasted Hatch Green Chile
1 cup white cheddar cheese, cut into 1/4 inch cubes

In a large mixing bowl, whisk together flour, salt and yeast. Gently mix in green chile and cheese
Add water and mix until a shaggy dough forms
Cover with plastic wrap and set aside 12-18 hours or overnight
Heat oven to 450F. When oven is hot, place a cast iron pot with a lid in the oven for 30 minutes
Meanwhile, pour dough onto a heavily floured surface and shape into a ball
Remove pot from the oven and drop in the dough. Cover and return to the oven for 30 minutes
After 30 minutes, remove the lid and bake an additional 15 minutes
Remove from oven and place on a rack to cool
