  • Grilled Chicken with Red Chile Rub

    Ingredients:
    2 Tbsp. Los Chileros Chipotle Chile Powder
    1 Tbsp. cumin
    1 Tbsp. smoked paprika
    1 Tbsp. garlic powder
    1 Tbsp. onion powder
    1 Tbsp. pepper
    1/2 Tbsp. turmeric
    1/2 Tbsp. Los Chileros Ancho Chile Powder
    Salt to taste
    4 lbs. chicken quarters

    Directions:
    Combine all of the dry spices and season with salt to taste. Generously add the dry rub to all the chicken pieces until evenly coated.
    Transfer to a large plastic storage bag and marinate overnight.
    Remove chicken from refrigerator 40 minutes before cooking. Preheat outdoor grill to medium/high heat.
    Place chicken on the grill and cook 30 minutes, turning every few minutes until internal temperature reads 165 degrees F. Remove from grill and rest for 5 to 7 minutes.
