  • Green Chile Zucchini Cornbread

    Ingredients:
    wet ingredients:
    1 cup milk
    1 cup grated zucchini
    2 eggs
    1/2 large onion, diced
    1/4 cup Santa Fe Seasons Hatch Green Chile
    dry ingredients:
    1 1/4 cups cornmeal
    1 cup flour
    1 Tbsp. sugar
    4 tsp. baking powder
    1 tsp. salt
    1 cup Manchego cheese, shredded

    Directions:
    Preheat oven to 350 degrees F. Grease and flour a loaf pan
    Put all the wet ingredients into a bowl and whisk to combine
    Sift the cornmeal and flour into another bowl and add the rest of the dry ingredients, mix well
    Add dry ingredients to wet ingredients and stir until just combined
    Add the batter to the loaf pan and bake 30 minutes, until a toothpick inserted in the middle comes out clean
    Allow to cool slightly before removing from the loaf pan
