Green Chile Taco Soup

1 Tbsp. olive oil
3/4 cup diced onion
1 Tbsp. minced garlic
1 small jalapeno pepper, minced
1 1/4 lb. ground beef
1 can pinto beans
4 oz. cream cheese, softened
1 tsp. kosher salt
fresh black pepper to taste
1 tsp. cumin
4 cups chicken stock
3/4 cup Hatch Valley Red Chile Sauce
2 cups corn kernels
1 15 oz. can diced tomatoes
1 cup Santa Fe Ole Hatch Green Chile

Add oil to a Dutch oven over medium heat.
Cook onion, garlic and jalapeno until softened.
Add ground beef and stir. Cook until browned.
Stir in beans, cream cheese, salt, pepper and cumin until combined.
Add red chile sauce, chicken stock, corn, diced tomatoes and green chile.
Stir and bring to a simmer for 20 minutes.
Top with sour cream, cilantro, avocado ad tortilla chips to garnish.
