  • Green Chile Shrimp Quesadillas (Complete Recipe)

    Ingredients:
    16 shrimp, shelled, and sliced in half lengthwise
    2 Tbsp. neutral oil
    4 12-inch tortillas
    1/2 cup cheddar cheese, shredded
    1/2 cup, Monterey Jack cheese, shredded
    1/2 cup Santa Fe Ole Hatch Green Chile
    1/2 tsp. Hatch Red Chile Powder
    4 Tbsp sour cream
    1 large tomato, chopped
    2 ripe avocadoes, peeled and sliced

    Directions:
    Preheat oven to 350 degrees F
    Heat olive oil in a non-stick fry pan over medium heat
    When hot, add the oil. Sprinkle the shrimp with red chile powder and sauté until just cooked
    Remove from pan and set aside
    Lightly butter one side of each of the 4 tortillas
    Place tortillas, butter side down on a flat baking sheet
    On half of each of the 4 tortillas, spread cheeses to within 1/4 inch of the edge
    Spread green chile and sliced shrimp on top
    Fold over tortillas and bake 6-8 minutes, or until the cheeses are melted and tortillas start to brown slightly
    Remove from the oven and cut each tortilla into 3 pieces
    Place quesadillas on a serving plate and garnish with sour cream, chopped tomato and avocado
