Green Chile Egg Salad Sliders

6 large, hard-boiled eggs, peeled and chopped
1/2 cup finely chopped celery
1/2 cup Pure Hatch Green Chile
1/4 cup finely diced red onion
1 Tbsp. Dijon mustard
1 Tbsp. mayonnaise
1 tsp. salt
1 tsp. pepper
6 Hawiian rolls

Place eggs, celery, green chile, onion, mustard and mayonnaise in a bowl.
Season with salt and pepper and gently stir until well incorporated.
Fill each slider bun with 1/2 cup egg salad and serve.
