Green Chile Corn Fritters with Chipotle Lime Sauce

3/4 cup flour
1 tsp. baking powder
1/4 cup cheddar cheese, shredded
2 cloves garlic, grated
salt and pepper to taste
1/2 cup milk
1 egg, beaten
2 ears corn, kernels removed
1/4 cup Santa Fe Seasons Hatch Green Chile
2 Tbsp. chopped fresh parsley
oil for frying
for the sauce:
1/2 cup mayo
1 Tbsp. lime juice
1/4 tsp. Los Chileros Chipotle Powder

In a large bowl, mix the flour, baking powder, cheese, garlic and season with salt and pepper
Add milk and egg, mixing until just combined. Stir in corn, green chile and parsley
Heat 1-2 inches of oil in a large skillet over medium-high heat
Drop tablespoon size balls of batter into the oil 4-5 minutes until crisp and golden on all sides
Remove and drain on a wire rack with paper towels underneath
for the sauce, combine all ingredients and a small bowl and whisk 2-3 minutes, until creamy
