Green Chile Cheddar Corn Dogs

Ingredients:
1 package hot dogs
3/4 cup yellow cornmeal
1/2 cup flour
1 tsp. baking powder
pinch salt
1 egg
1/2 cup milk
4 oz. Santa Fe Ole Hatch Green Chile
1/2 cup cheddar cheese, shredded
vegetable oil for frying
Hatch Sweet and Spicy Mustard for dipping

Directions:
Cut hot dogs in half horizontally. Dry with a paper towel and inset lollipop stick in the end
In a medium bowl, whisk together cornmeal, flour, sugar. baking powder and salt
In a separate bowl, whisk egg and milk until smooth. Stir in green chile and cheese
Add dry to wet ingredients and stir to combine. Pour into a tall pint glass
Heat oil in a heavy-bottomed pot over medium heat until a thermometer reads 350 degrees F
In batches, dip each hot dog into batter and fry until golden on all sides, about 3 minutes
Transfer to a paper towel lined plate. Serve with warm mustard for dipping
