Green Chile Calabacitas
Ingredients:
2 Tbsp. olive oil
4 medium zucchinis, sliced into half moons
3 ears of corn, kernels sliced off
3 Roma tomatoes, diced
1/2 cup Santa Fe Ole Hatch Green Chile
1 small jalapeno, diced
4 cloves garlic, minced
juice of 1 lime
1/2 tsp. cumin
salt and pepper to taste
3 Tbsp. cilantro, chopped
Directions:
Heat olive oil in a large skillet over medium-high heat and sauté squash 3-4 minutes, until golden
Add corn, tomatoes, green chile, jalapeno and lime juice, stir to combine
Add cumin and season with salt and pepper.
Cover and cook about 15 minutes, until veggies are tender crisp
To serve, stir in cilantro and top with lime wedges

My family loves their green chili salsa! I use it in all kinds of receipts. I have made stew, tacos, cornbread, corn salad and more. Also love the beer bread! Easy to make and delicious.
