Green Chile and Sweet Potato Breakfast Quesadilla

1 Tbsp. olive oil
2 large eggs
2 8 inch flour tortillas
1/2 cup cheddar cheese, shredded
1/2 cup mashed roasted sweet potato
1/4 cup Santa Fe Ole Roasted Hatch Green Chile

Add eggs to a bowl with a few teaspoons of water and whisk until well combined
Add 1/2 teaspoon of olive oil to a large skillet and place over medium-low heat
Add eggs, and scramble, until just done. Remove and transfer to a palte
Add 1/2 teaspoon oil to the same skillet over medium heat. Add 1 tortilla
Sprinkle 1/4 of shredded cheese, mashed sweet potato, green chile, scrambled eggs
Remaining cheese and the second tortilla. Cook 2-3 minutes per side, until golden and cheese is melted
