Fudgy Chimayo Red Chile Brownies

Chimayo Red Chile and cinnamon give these brownies and rich smoky flavor


5 oz. high quality dark chocolate, chopped
10 Tbsp. butter
2 Tbsp. Chimayo Red Chile Powder
1 tsp. cinnamon
1 tsp. kosher salt
1 3/4 cups sugar
3 eggs
1 cup flour


Preheat oven to 350 degrees and line a 9x9 baking pan with parchment paper that extends over the sides of the pan
In a small saucepan, melt chocolate and butter oven low heat. Add red chile, cinnamon and salt. Set aside to cool
In a mixing bowl, combine melted chocolate with sugar. Add eggs and mix til smooth and fold in the flour
Transfer to the baking pan and bake until brownies are firm and a bamboo pick inserted in the middle comes out with just a few crumbs.
Remove from oven and cool completely. For best results wrap in plastic and let them sit several hours of overnight
