Crispy Black Bean and Green Chile Tacos

1 14 oz. can of black beans, rinsed and drained
2 cloves garlic, minced
1/2 yellow onion, diced
1/4 cup Santa Fe Ole Hatch Green Chile
2 Tbsp. TD's Taco Seasoning
small flour tortillas
Olive oil or butter for frying
Cilantro Lime Sauce:

1/2 cup cilantro leaves
1/4 cup olive oil
1/4 cup water
1/2 cup green onions, chopped
2 cloves garlic
1/2 tsp. salt
juice of 2 limes
1/2 cup sour cream

Blend all ingredients for the cilantro lime sauce until smooth and set aside
In a food processor, blend the beans and taco seasoning. Fold in the green chile.
In a skillet over medium heat, cook onion and garlic with a drizzle of olive oil until soft
Add black bean mixture, stir to combine, and cook until soft and creamy, about 5-7 minutes
Spread a few tablespoons of the filling into a flour tortilla and fold in halt. Repeat with the rest of the tortillas
Heat olive oil in a skillet over medium heat. Fry until crispy and golden brown.
Serve with cilantro lime sauce on the side.
