New Mexican Green Chile Apple Pie Recipe!


1 1/2 lbs large granny smith apples
1 1/2 lbs large honey crisp apples
2 tbls butter cubed
1 tbls lemon juice
1/2 cup white sugar
1/2 cup brown sugar
3 tbls flour
2 tsp cinnamon
3/4 tsp ginger
1/2 cup Hatch Green Chile
3/4 cup pine nuts
1 egg
2 pie crusts for 9 inch pie


In a medium bowl, combine peeled & sliced apples, seasonings and let it sit a few minutes.
Add Hatch Green Chile and stir.
Lay the bottom pie crust over a 9" pie plate and sprinkle the pine nuts over the bottom crust.
Spoon in the apple filling, dot with the butter cubes and cover with top pie crust. Lightly brush crust with an egg wash, sprinkle with a pinch of sugar.
Bake at 425 degrees for 15 minutes, then at 400 for 45-60 minutes, until juices have set up, and crust is golden.
If the crust begins to darken, cover the pie with foil for the remaining baking time. Let cool, and serve.
