Sweet and Spicy Chimayo Chile Popcorn
Ingredients:
2/3 cup popcorn kernels
1/2 cup B's New Mexico Honey
1 stick butter
1 tsp. kosher salt
1 Tbsp. Chimayo Chile Powder
1/2 tsp. baking soda
Directions:
Preheat oven to 200 degrees F and spray a 9x13 baking dish with cooking spray
Air pop popcorn and pour into prepared pan
In a medium saucepan, melt butter and honey. Add salt and chile powder
Stir over low heat until it begins to boil. Add baking soda and continue to stir
Mixture will begin to foam. Remove from heat and continue stirring while pouring over popcorn
Stir until popcorn is well coated. Place in oven and bake 15 minutes
Repeat 3 times, until popcorn has cooked 1 hour.
Remove and stir until cooled, about 2 minutes to keep popcorn from sticking to the pan
