Lavender Peach Shrub
Ingredients:
1 1/2 lbs. overripe peaches
1 1/4 cups sugar
3 Tbsp. Frolicking Deer Culinary Lavender
1 1/4 cups apple cider vinegar
Directions:
Chop the peaches into rough cubes and place in a large glass dish with a lid.
Sprinkle the sugar and lavender on top and mix well with the peaches.
Cover and refrigerate 2 days, to let the juices extract from the peaches.
After 2 days, strain the fruit syrup from the chunks.
Transfer the fruit pieces to a clean cheesecloth and gently squeeze to release and extra juice.
Place the peach shrub in a jar and scrape any leftover sugar in the large dish into the shrub as well.
Add cider vinegar and mix well until the sugar dissolves.
Strain through a fine sieve into a clean bottle.
Leave the shrub refrigerated 4-7 days. The vinegar flavor will mellow slowly over time.
Mix the shrub with ice water or your favorite liquor, tequila, vodka.
