Hatch Green Chile Ranch Potato Salad
Ingredients:
4 medium russet potatoes
6 strips bacon, cooked
1 cup Santa Fe Ole Hatch Roasted Green Chile
2 green onions, sliced
1/2 cup mayo
1/2 cup buttermilk
2 tsp. red wine vinegar
1/2 tsp. garlic powder
1/2 tsp. onion powder
1 Tbsp. parsley, chopped
1 clove garlic, minced
salt and pepper to taste
Directions:
Peel potatoes and dice in 1 inch cubes
Boil in salted water 12-15 minutes, until tender. Set aside to cook
Combine green onions, mayo, buttermilk, vinegar, garlic powder, onion powder, parsley and garlic
Gently stir in green chile. Add potatoes and stir to combine
Before serving, top with crumbled bacon
