Hatch Green Chile Chicken Salad

Ingredients:
1 rotisserie chicken, meat removed, shredded
1 ear of corn, kernels removed
1 cup Santa Fe Seasons Flame Roasted Hatch Green Chile
1 jalapeno, seeded and diced
1 celery rib, finely diced
1/4 red onion, finely diced
3 cloves garlic, minced
1/2 cup cilantro, chopped
1 tsp. cumin
1 pinch cayenne pepper
3/4 cup mayo
2 tsp. dijon mustard
1 Tbsp. fresh lime juice

Directions: Combine all ingredients and stir well to combine
Season with salt and pepper to taste
Refrigerate at least 1 hour to allow flavors to meld
