Corn and Hatch Green Chile Fritters

4 sliced bacon, cooked until crisp and chopped
1 (15oz) can corn drained and rinsed
1/4 cup Santa Fe Seasons Hatch Green Chile
1/4 cup red onion, chopped
1 cup corn meal
1 cup buttermilk
1/2 cup Bisquick baking mix
1 tsp. baking powder
1 tsp. cumin
1 tsp. onion powder
1 tsp. garlic powder
1/4 tsp. chili powder
salt and pepper to taste

Combine all ingredients in a large bowl and stir to combine
Heat a large skillet to medium heat, add enough canola oil to cover the bottom
Using an ice cream scoop, measure the mixture and place in the skillet
Lightly press and cook 1-2 minutes on each side, until golden brown
Garnish with lime wedges, queso freso and green onions
